Cake Creations

I hate BAKING.  LOVE cooking. HATE baking. I don’t know why, but that is a fact.

So, I’m not sure where it started… although, as I think about it, my friend in Jerusalem threw a birthday party for her son and the cake she made was fascinating!  It was a sheet cake with minature Tonka toy trucks all over it hauling various things – rock candy, digging up dirt (chocolate cake), etc.  (AND I finally did my own version of that cake when my son turned TWO!! See below!)  Maybe that subconsciously started it… But eitherway, I started making birthday cakes for my kids.  First one was the Barbie cake where the cake is the dress.  Second one was a purse cake… and so on.  I still don’t really like baking, but I have found the challenge of making something fun and different and being able to be creative, to be very gratifying!  Also, living overseas, moving around frequently, it is a constant for my kids. They can expect a really cool cake for their birthday no matter where we are.

Dump Truck Cake

Easiest thing ever and you simply can’t mess it up… I did two box cakes (the one on top broke in half but you’d never know!!).  I will never buy store bought frosting ever again.  I now make my own cream cheese frosting (to die for and btw, that is a pile of cream cheese frosting behind the dump truck hidden as my reserve when it came time to eat the cake!!).  Cream cheese frosting recipe here.  I did double it for this recipe as I use a bit to glue the two sheet cakes together and wanted to make sure I had enough to cover the cake.  After frosting the cake I pressed two packages of smashed oreo cookies onto the cake, a bit in the dump truck and carved out a chunk for the digger truck?!  I don’t know the official name… bought a few Tonka trucks and cones and voila!  NOTE:  I do freeze the cake after it cools in the pans BEFORE I remove them.  They come out easier and in one piece and freeze when done.  Keeps the frosting from getting drippy.
