Mujaddara

Mujaddara – Lentils and Rice (Gluten Free)

I love ethnic food and I have come to especially love Middle Eastern food as that is where I have lived for many years.  This is a traditional Arabic dish that I find most women like and most men go Blech… :)  It is vegetarian!

Ingredients:

1c lentils
1c rice
1 onion
4T olive oil
1T cumin
Salt and pepper
Plain yogurt (full fat, PLEASE)

To make it complete you need the Arabic Salad: diced cucumbers, diced tomatos, juice from one freshly squeezed lemon, olive oil, salt (to taste). (You can add freshly chopped mint and freshly chopped onions as well.)

Directions:

Boil lentils in water until tender.  Slice and fry one onion in olive oil and cumin.  After lentils are soft, add saute’d onions/olive oil mixure AND add salt to taste.  Add rice and make sure the water covers the rice.  Cook the rice covered.  When the rice is done and all water is absorbed, salt to taste – voila.  You are finished.

How to EAT it!!  The best part…

Scoop rice/lentil mixture into bowl, spoon over plain yogurt (full fat, please… don’t do that low or no fat stuff), put a nice big scoop of salad on top of the yogurt and enjoy!
