Ratatouille Wraps

So, as stated in my Ratatouille recipe, I doubled it.  However, I had a lot of left over veggies.  What to do with them?  Well here is my own recipe…  (Gluten Free if you use a different type of tortilla).

Ingredients

Zucchini, sliced
Yellow squash, sliced
Eggplant, sliced
Chicken, cut into strips
Butter
Salt
Pepper
Montreal Steak seasoning
Olive Oil
Flour (or other) tortilla wraps

Directions

In a frying pan, saute the zucchini, squash and eggplant with butter and olive oil until caramelized.  Season with salt and pepper.  Be creative… feel free to add other things too!  While the vegetables were sautéing, I added the chicken and cooked it with the vegetables for combined flavors.  When it was all finished… dumped it in the tortilla and voila… Amazing!!
